2011: A Foodie Odyssey part 9: Estonia featuring Estonian Pork

O.K. so this is way over due and I apologize.  It is time to get back on track and keep up the journey. This is the ninth instalment of 2011: A Foodie Odyssey and the country that had won the poll was Estonia.  A small northern European country they like there food fresh and eat to the season.  They hunt, fish, and farm.  They are not known as culinary masters, just simple yet delicious cuisine.

I chose to do a pork dish as it featured sauerkraut and apples.  If you have been following this blog at all then you know I am obsessed with apples.  The combination with pork is classic and the addition of the kraut had me sold.

Here is what you'll need:

1 quart sauerkraut
2 pounds of pork cut into bite size cubes
1 apple cut into bite size pieces
1/2 cup pearled barley
1 tablespoon of brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth

This is a great recipe for one simple reason.  Throw all the ingredients in a pot and simmer until the pork is tender.  Be sure to still occasionally as not to burn the bottom.  The cook time for me was about an hour and a half.

The flavor was mild.  The apples melt into the pork and go so well with the sauerkraut that I was amazed.  It is very simple and I highly recommend giving it a try sometime.  Get adventurous in the kitchen.  Don't be afraid to give new things a try. If all else fails and the recipe is not to your taste, there is always Pizza!!!
